I want to share this comment with friends a little bit about "cream of tartar". They said it a natural derivative of grape juice. It is used to make perfect egg white foam for meringues,produces a whiter angle food cake and makes baked goods fluffy. It is harder to dry out egg whites by overhardbeating (overhardbeating makes egg whites dry out,that's why we have to use cream of tartar....in order to keep it pluffy and moisture). Use 1 teaspoon per cup of egg whites.
