A* High protein flour -250 gm * Wholemeal flour -250 gm * Cold water -315 gm * Salt -10 gm * Brown sugar -40 gm * Instant yeast -10 gm * Milk powder -20 gm * Instant coffee -50 gm B* Shortening -30 gm
<Method>
1. Mix ingredients<A> on low speed for 1 minute. Continue to mix on medium speed for 5 minutes. 2. Add in shortening. Mix for another 15 minutes until the dough becomes smooth and elastic. 3. Ferment for 40 minutes. 4. Scale the dough at 250 gm each. Mould into bolls. Ferment for 15 minutes more. 5. Mould into oval shape and place on a greased baking tray. 6. Let them set to rise for 40 minutes. 7. Bake in a preheated oven at 210 C for 20-25 minutes until well baked.
