Usually, Mirin brewers buy Shochu as raw material of Mirin but they brew Mirin from rice to make its raw material. It is rare and old style of brewing. When they mix Mirin at fermentation they try to have a conversation with microorganisms of rice. It takes two months to make raw material of Mirin and start making Mirin. Usually, Mirin is fermented only six months but Kankyo Mirin is aged three years to finish its process. This style is same as 100years ago which have written on the old document of brewing. This Sake is brewed by Japanese Zen Monk using with Old temple style and 90% Polished Brown Rice. A color of DAIGO is beautiful gold like Rice Champagne color and tastes natural sweet.
It is said that the origin of brewing Japanese Sake is in the 10th century at the temple called Bodhi Mountain Syouryaku-ji upstream of Nara river . This old way of traditional brewing is called Bodai Fermentation and it is possible to brew even at a warm season. First is to take in a lactic acid bacterium in the air to press down breeding of various germs with making lactic acid fermentation then urge multiplication of wildness yeast (indigenous yeast in brewery for long time), and making alcoholic fermentation. This was very skillful and rational microbiological method even in ancient times. This fermentation is original style of Kimoto and use sour water called Soyashi for brewing and which is fermented by lactic acid (((((((( ถามเพื่อนให้น่ะค่ะ )))))))
